3 Ingredient Banana Bread Muffins

I was headed camping last weekend and I wanted to bring some great breakfast options for everyone. I whipped up a batch of these 3 ingredient Banana Bread Muffins and made half with chocolate chips and the other half with walnuts. The chocolate chip were the first to go! This is the easiest quickest banana bread recipe I have ever made. This is a must make recipe for those of you in a time crunch but want delicious homemade muffins.

This was my daughters first real camping trip and she had a blast. I don’t think she has ever been that dirty. It’s funny how little kids are drawn to the dirt, sand, sticks and water. Her favorite was drawing in the sand with sticks. She also wanted to explore all the woods around us. A big thanks to my father in law who gave us a trailer, it sure makes camping more enjoyable. You have the pleasure of being outdoors all day but the comfort of sleeping inside on a bed. We are headed camping again this weekend and I’ll probably make another batch of these muffins because they sure make a fantastic snack while breakfast is being made. Enjoy!

Ingredients

  • 1 box yellow cake mix
  • 3-4 bananas
  • 2 eggs

Optional

  • 1/2 cup chocolate chips
  • 1/2 cup walnut pieces

Directions

Step 1
Preheat oven to 350 degrees F.
Step 2
Line muffins tins with cupcake wrappers.
Step 3
Mash bananas in bowl. I did this in my KitchedAid mixer with the whisk.
Step 4
Add eggs and cake mix and stir until blended.
Step 5
Stir in chocolate chips or walnuts if desired. I did half and half.
Step 6
Fill your muffins tins 3/4 full.
Step 7
Bake for 20-25 minutes until a toothpick inserted comes out dry.

Lake Twentytwo ~ Lake 22 Washington Hike

We went hiking up to Lake 22 in the North Cascades last weekend. This trail is at the base of Mount Pilchuck just off the Mountain Loop Highway and it was absolutely gorgeous. If you are ever in the Seattle area this is a must see place. It was the middle of August and there was still snow up there. It was 5.4 miles round trip and has an elevation gain of 1500 feet and let me tell you, you will feel it, but it’ll feel great once you reach the top because you are rewarded with this beautiful view. It is a very well maintained trail with views of waterfalls

Steamed Clams with Fresh Basil

These are the best clams I have ever had at home, they are up there with the best steamed clams I have ever had in a restaurant. My husband said the same thing, so this recipe is a must for seafood lovers.

We paired this with Garlic Shrimp, Strawberry Summer Salad and a delicious glass of Moscato. It was a long day for my daughter so I didn’t want to wake her for dinner so she slept through most of it but enjoyed a bit once she woke up and realized we were eating dinner.

These clams are absolutely delicious and an easy date night meal. Make sure to pair this with some good crusty bread. You won’t be sorry, like I was when I realized all the yummy juice under the clams that got dumped down the drain because we had nothing to dip in it. Enjoy!

Steamed Clams with Fresh Basil

Ingredients

  • 1lb fresh little clams (approximately 2 dozen)
  • 2 teaspoons olive oil
  • 3 cloves garlic (cut into large chunks)
  • 1 teaspoon unsalted butter
  • 2 tablespoons fresh basil (parsley can be subsituted)
  • 1/2 cup white wine (I used moscato because that is what I had open)
  • 1/4 cup water

Directions

Step 1
In a large pot heat oil. When hot cook garlic until golden brown.
Step 2
Add butter, water, wine and rinsed clams, cover tightly and reduce to medium-low heat.
Step 3
Cook for 5-10 minutes or until the shells open. Make sure not to overcook as clams will become rubbery. Discard any that didn't open.
Step 4
Pour clams and juice into a serving bowl. Top with fresh basil and enjoy. Don't forget to dip bread in juice under clams.

Roasted Seasoned Carrots

I was at the farmers market the other day buying some delicious huge snap peas and I looked over and saw these gorgeous carrots, so I grabbed a bunch up. We ate a few as soon as we got home in some dip but I wanted to have them for dinner. So I figured why not bake them and add a little seasoning. They turned out excellent and my whole family loved them, especially my daughter.

I feel like carrots don’t get enough credit, they are often pushed to the side of peoples plates and left :( but that is a shame. Next dinner party you have make these and watch them get gobbled up.

For this recipe you can cut them into spears, slices or leave them whole like I did. If they are really big I’d recommend cutting them in some way for even cooking. You can add a huge variety of spices to change these dramatically. Some suggestions are paprika, thyme, rosemary, cumin, sage, cayenne, crushed red peppers actually anything you can think of would be great just make sure not to do too many at once :) . You could also try pre-made spice blends such as Italian, Old Bay or Mexican. Let me know what spices you experiment with.

  • 1lb carrots
  • salt & pepper
  • crushed red peppers
  • 1 tablespoon olive oil

Directions

Step 1
Preheat oven to 425 degrees F.
Step 2
Clean and chop carrots into desired size. Coat carrots with olive oil.
Step 3
Spread onto cookie sheet and season with salt, pepper and crushed red pepper.
Step 4
Cook for about 20 minutes flipping about half way through. Edges will be slightly golden brown.

Homemade Strawberry Fruit Roll-ups (fruit leather)

Homemade fruit roll-ups at home have never been simpler. Only a couple ingredients, a blender, an oven and a few hours of patience and you have a healthy snack for your little one, or in my case husband and little one. Some may say this is time consuming but you are creating a healthy alternative to store bought preservative packed fruit leather.

Some may think that fruit leather is a weird sounding name, but that is what it technically is called but if that’s the case call them fruit roll-ups. Either way you will enjoy snacking on these because they are yummy in your tummy, that is what my daughter says.

Ingredients

  • 4 cups strawberries
  • 1/4 lemon (peeled)

Optional

  • sugar to taste

Directions

Step 1
Preheat oven to it's lowest temperature. My lowest temperature was 170 degrees F.
Step 2
Throw your strawberries and lemon into a blender or a food processor and blend until smooth, you may need to add a little water. You want it thin but still sort of thick, if that makes sense. Mine only took 1-2 minutes but my blender pulverizes things.
Step 3
Once smooth taste to see if you want it sweeter, I did not add any sugar, I felt the strawberries were more then sweet enough.
Step 4
Line baking sheets with plastic wrap, this will shrink a bit in the oven so make sure to have a little extra around the edges.
Step 5
Pour your strawberry puree onto plastic wrap. It should be thin enough to pour but thick enough to stay where it's poured. Use a spatula to spread into a thin even layer.
Step 6
Bake for 6-12 hours, all oven times vary. I started mine in the evening, shut my oven off when I went to bed and then turned it back on in the morning. I would say total mine took close to 12 hours, but keep a close eye on yours to make sure it doesn't burn.
Step 7
You will know it's done when it's tacky to the touch. Let it cool and then cut into strips and enjoy your healthy homemade fruit leather.

Once they are cooked and cooled I like to peel them off the plastic wrap and lay it on parchment paper. Then I will cut them into 2″ strips and roll them like fruit by the foot. It’s a fun way to pack them in your kids lunch or toss them into a mason jar on the counter for easy accessibility.

My blender filled to the brim with as many strawberries as I could fit and a wedge of lemon.

Baking in oven, I can fit 4 cookie sheets in at a time, and I recommend fitting as many as you can fit, just swap them every 2 hours for even cooking.

My daughter patiently waiting for them to bake! Don’t mind the smudges all over the oven…living with an almost 2 year old :)

Summer Strawberry Mixed Green Salad with Slivered Almonds

This salad is simple and delicious and a great way to use up some of those extra strawberries that are in season right now. When my husband first saw the salad he said, “strawberries? In my salad?” I told him to just try it and he loved it. This salad is great with a vinaigrette, I choose a Parmesan garlic vinaigrette and it was delicious.

Strawberries are my daughters favorite right now and she will eat them until she is red in the face. So it was a great way for her to eat the same as us.

This salad is great any time of year. Winter it’s delicious because it’ll remind you of summer and who doesn’t want to be reminded of the sun and beautiful weather :) so try this salad now!
