Easy Crockpot Mexican Cheese Bean Dip

This dip is so easy to make and perfect for game day. I had my 5 year old help me and she had so much fun. You can make this in a crockpot or a cast iron skillet, both ways are delicious, the crockpot might be just a touch easier. Enjoy!

Easy Crockpot Mexican Cheese Bean Dip

Ingredients

1/4-1/2 cup Mozzarella cheese

1/4-1/2 cup Cheddar or Mexican blend cheese

1 can diced tomatoes with chiles (including juice)

1/4 cup cilantro

1 can black beans

1 small yellow onion

1 tbsp olive oil

1 jalapeno

2 T taco seasoning

For Serving

Serve with tortilla chips, avocado and lime wedges

Directions

  1. Heat oil in skillet, salute onion for about 3-4 minutes. Add taco seasoning and cook an additional 30 seconds to 1 minute. Transfer onion to crockpot if using a crockpot or keep in cast iron skillet.
  2. Add diced tomatoes, jalapeño, half of the cilantro and rinsed beans.
  3. Sprinkle top with cheese and cover top. Give a little stir and cover with lid.
  4. Cook in slow cooker on high for 2 hours or slow for 4 hours. Cast iron on low for 1-2 hours.
  5. Mix well, then add remaining cilantro and add chopped avocado right before serving.

 

 

Pineapple Salsa

I love tacos! I’m always trying to come up with a new recipe to try. When I came across this pineapple salsa recipe to put on tacos I fell in love. Its delicious on tacos and pretty much everything else. Give this a shot you will not be disappointed.

Pineapple Salsa
  • 1 cup chopped pineapple
  • 1 cup chopped cucumber
  • ½ cup chopped cilantro
  • ½ cup chopped shallot or red onion (I used shallot)
  • a squeeze of lime juice
  • a pinch of salt
  • tortillas for serving
  • cilantro and lime for serving

Combine all ingredients and enjoy!

Restaurant Style Salsa

My favorite part about going to a Mexican restaurant is the chips and salsa! I’m sure that I’m not alone in this, so when I made this recipe I knew I had to share because it’s that good and so similar to my favorite Mexican restaurant. Most of the ingredients are items that you probably have on hand, or are items you should keep on hand, in case you have pop in guests, you can whip this up in a jiffy.

Restaurant Style Salsa Recipe

No need to go to a Mexican restaurant when you can make restaurant style salsa at home. FrenchToasty.com has lots of Mexican food recipes.

Ingredients

  • 1 (14oz) can whole tomatoes with juice
  • 1 (10oz) can Rotel (diced tomatoes and green chilies)
  • 1/4 cup chopped onion
  • 1 clove garlic (minced)
  • 1 jalapeno (quarted and sliced thin (seeds add heat, so remove if you want less spicy))
  • 1/4 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/2 cup cilantro
  • 1/2 lime (juiced)

Directions

Step 1
Combine whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you'd like---I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.
Step 2
Refrigerate for at least 1 hour. Serve with tortilla chips or cheese nachos.

Sweet & Delicious Fruit Dip

My best friend brought this over and it was too delicious to not share with all of you. 2 ingredients and couldn’t be simpler or better. We dipped raspberries, oranges and kiwi but next time I’ll add apples and strawberries because it would be so tasty with those. I hope you all enjoy and bring this to your next girls get together!

Ingredients

1 jar marshmallow fluff

1 8oz block of cream cheese

Directions

Mix together in a stand mixer or with a handheld mixer until smooth and serve with your favorite fruit.

Shore is Good Seafood Dip

Seafood Dip

I love all types of seafood, with shrimp and crab being my two favorites. So when I came across this seafood dip I was so excited to try it. I was getting together with my in-laws on Saturday night and my parents on Sunday, so I made a double batch of this and split in half. After the first day I was so excited to make it again the next day for my family. Everyone loved it especially my daughter who loves to dip everything. She would dip her cracker and lick the dip off and re dip…hope no one minds baby slobber :) good thing it was just family. I served with Ritz and wheat thins but any cracker would be great.

I don’t think there can ever be too much seafood in one meal so load this up with as much as you want. Let me know if you decide to add anything else, I can’t wait to try it your way, enjoy!

Ingredients

  • 6oz crabmeat (canned or fresh, make sure to pick out all shells)
  • 1/2lb Parmesan (freshly grated)
  • 1/2 cup mayonnaise
  • 1/2 can cream of shrimp (you can subsitute cream of celery if you can't find shrimp)
  • 2 stalks celery (diced)
  • 1 Medium onion (diced)
  • 1 Medium green bell pepper (diced)
  • 2 tablespoons butter
  • 1/2lb bay shrimp (fresh)
  • 1/2 teaspoon white pepper (black pepper can be subsituted)
  • 1 cup cheese (cheddar and pepperjack)

Note

You can make this dip ahead of time. Store in fridge after step 5. When ready to serve start with step 6 by putting dip in casserole dish.

Directions

Step 1
Preheat oven to 350 degrees F.
Step 2
Over medium heat melt butter in skillet.
Step 3
Saute the onion, celery and bell pepper for 2 minutes.
Step 4
In bowl combine soup, mayonnaise, Parmesan, crab meat, shrimp and pepper.
Step 5
Stir sauteed vegetables into the seafood mixture.
Step 6
Spoon mixture into an 8 x 11 inch casserole dish, or some size similar.
Step 7
Top dip with cheese.
Step 8
Bake for 30-40 minutes and serve with crackers.

Pineapple Jalapeno Salsa

I have always loved pineapple as long as I can remember. And I love anything that has a little bit of a spice to it. So this pineapple jalapeno salsa is a perfect match for me. I have enjoyed it with chips, on BBQ’d chicken, tacos, omelets and breakfast scrambles. The possibilities are endless with this salsa, Enjoy!

Ingredients

1 cup pineapple, chopped small (fresh or canned)
4 tablespoons red bell pepper, finely chopped
4 tablespoons fresh cilantro, chopped
2 tablespoons red onion, finely chopped
2 tablespoons jalapeno, finely diced (omit to make not spicy)

Directions

Mix pineapple, red bell pepper, cilantro, red onion and jalapeno into medium bowl.

This is great on chicken, meat and delicious on tacos.

Every time I get together with my girlfriends we always choose Mexican. I don’t know if it’s the chips with salsa and guacamole or the margaritas. All I know is that I love Mexican food either at a restaurant or at home. Guacamole is something that I love as a dip, on burgers and sandwiches. It’s an item that I love with everything! And it was also one of the first foods I gave my daughter. She loved mashed avocado, and now she loves to dip veggies in it. I love that it’s a versatile item that you can make spicy or just enjoy the yummy avocado taste.

Avocados are high in Omega 3 fatty acids, has anti-cancer benefits, anti-inflammatory benefits, cholesterol benefits, good for the heart, helps regulate blood pressure, great for the eyes and helps prevent birth defects. So with all that said I think I might make Mexican food tonight with a delicious side of guacamole. Enjoy!

1 large ripe avocado
1/2 red onion, chopped small
1 jalapeno, seeded and finely chopped (optional, will add heat)
1/2 bunch cilantro, finely chopped
1/2 lime, juiced
pinch of salt, optional if needed

Directions

  1. Remove pit and skin and mash avocado. Add lime juice to help mash and lime juice keeps it from browning.
  2. Add other ingredients to avocado and mix up.
  3. Serve with chips or with any Mexican dish.

Store in air tight container for 1 day. You can put the pit in your final product to help keep from browning.
