Grilled Cheese with Avocado, Apple & Bacon Sandwich

Something about this time of year makes me want want comfort food, it’s cold and dreary out and I love warm foods. I think grilled cheese and tomato soup is definitely on that list for a lot of people. But I didn’t feel like a classic cheddar cheese and bread sandwich. I wanted to give it a total makeover and I’m sure glad I experimented and that my family doesn’t mind trying new things.

I know the name sounds a little interesting, at least that is what my husband said when I told him what was for dinner. I said wait and try it and then let me know what you think. It was a complete success, he thought it was delicious and the apple gave a nice little crunch. I can’t describe how good it was, I seriously want it right now and I just ate lunch so I’m NOT hungry, but it sounds so good! I’d like to say please try before you knock it because it will surprise you.

Grilled Cheese with Avocado, Apple & Bacon Sandwich Recipe

This twist on a classic comfort sandwich it surprisingly delicious. FrenchToasty.com has lots of sandwich recipes.

Ingredients

  • 8 pieces bread
  • 8 thin slices pepper jack cheese
  • 1 large avocado
  • 1 large apple (i used honeycrisp but any kind would work great)
  • bacon bits
  • butter

Directions

Step 1
Heat skillet to medium heat. Butter each slice of the bread on one side. Lay 4 slices on hot skillet.
Step 2
Lay the cheese on the bread, then the sliced apple, then sliced avocado and then sprinkle bacon bits, top with one more slice of cheese add the 2nd slice of bread.
Step 3
Once cheese starts to melt and bread it toasted brown, flip sandwich and cook for a few minutes on the other side until that side turns brown. Cut each sandwich in half and enjoy with tomato soup or by itself.

Avocado Health Benefits

Avocados are great in salads, sandwiches, tacos and made into guacamole. You can also substitute avocados in place of mayo in tuna or chicken salad. Sailors to the new world used avocados in place of butter on bread. Possibilities are endless with avocados and they are a great item to add into your daily or weekly diet. They are considered the good kind of fat and provide lots of benefits.

Avocados are a good source of fiber, vitamins C, K, potassium, folate and B6. On average 1 avocado has 300 calories, 15 grams of heart healthy unsaturated fat and only 2 grams of saturated fat. One avocado contains 1/3 daily value of vitamin C and more than 50% of daily value of vitamin K.

Benefits

  • Prevent Prostate Cancer- They have been shown to inhibit the growth of prostate cancer.
  • Oral Cancer- Research has shown that some of the compounds in avocados seek out per-cancerous oral cancer cells and destroy them but without harming the healthy cells.
  • Protects against Breast Cancer- They are high in oleic acid, like olive oil, which in many studies have shown to prevent breast cancer.
  • Eye Health- Lutein protects against macular degeneration and cataracts. And avocados have more carotenoid lutein then any other commonly consumed fruit.
  • Lower Cholesterol- They are shown to lower cholesterol because they are high in the compound beta-sitosterol. By eating once a week a study showed that 45 volunteers experienced an average drop of 17%.
  • Heart Health- One cup of avocado as 23% of the recommended daily value of folate.
  • Prevents Strokes- Because of the high level of folate it gives you a much lower risk of stroke then those who don’t.
  • Absorbs Nutrients Better- Certain nutrients are absorbed better when eaten with avocados. Some as up to 5 times more.
  • Prevents Aging- They are an excellent source of glutathione which helps prevents aging, cancer and heart disease.
  • Maintain Overall Health-  Avocado is the best fruit source for Vitamin E, which protects against many diseases and helps maintain overall health.

Tips

To keep avocados from browning, sprinkle lemon juice on the exposed middle and keep in refrigerator in air tight container. Or once you have mashed it into guacamole leave the pit in the guacamole and it helps prevents browning also.

Fun Fact

On Super Bowl Sunday, Americans eat about 8 million pounds of guacamole. And on Cinco de Mayo it’s more up around 14 million pounds. Good thing for avocados, otherwise guacamole wouldn’t be the same. :)

Homemade Baby Guacamole

Guacamole is a great option for one of baby’s 1st foods. Avocados are good for the heart, helps regulates blood pressure, anti-cancer benefits, great for the eyes and high in Omega-3 fatty acids which help with brain development. Plus it’s an item that you can make for yourself, and children love to eat the same thing that mom and dad are.

As I’ve stated before I love Mexican food, and who doesn’t love guacamole? I’ve wanted my daughter to experience all sorts of flavors and spices so nothing is off limits for a least a sample, unless it’s really hot or too spicy. But I feel if you introduce a large variety of flavors then they should grow up less picky and eat most things.

As my daughter has gotten older I’ve made her guacamole more chunky and I sometimes just giver her avocado cubed. Just make sure that you give your baby the correct consistency for their age, and I’m sure they will be big fans of this guacamole. Enjoy!

Directions

1 large ripe avocado

Mash avocado and add water until you have reached the desired consistency for your baby. The older they get you could use lime juice instead of water.

Homemade Guacamole

 

Every time I get together with my girlfriends we always choose Mexican. I don’t know if it’s the chips with salsa and guacamole or the margaritas. All I know is that I love Mexican food either at a restaurant or at home. Guacamole is something that I love as a dip, on burgers and sandwiches. It’s an item that I love with everything! And it was also one of the first foods I gave my daughter. She loved mashed avocado, and now she loves to dip veggies in it. I love that it’s a versatile item that you can make spicy or just enjoy the yummy avocado taste.

Avocados are high in Omega 3 fatty acids, has anti-cancer benefits, anti-inflammatory benefits, cholesterol benefits, good for the heart, helps regulate blood pressure, great for the eyes and helps prevent birth defects. So with all that said I think I might make Mexican food tonight with a delicious side of guacamole. Enjoy!

Guacamole

1 large ripe avocado
1/2 red onion, chopped small
1 jalapeno, seeded and finely chopped (optional, will add heat)
1/2 bunch cilantro, finely chopped
1/2 lime, juiced
pinch of salt, optional if needed

Directions

  1. Remove pit and skin and mash avocado. Add lime juice to help mash and lime juice keeps it from browning.
  2. Add other ingredients to avocado and mix up.
  3. Serve with chips or with any Mexican dish.

Store in air tight container for 1 day. You can put the pit in your final product to help keep from browning.

Different batches may look a little different, but they all taste just as yummy!
