Artichoke Jalapeno Parmesan dip is best served with bread or crackers, right? So why not put in between two slices of bread and grill? I know the name may sound interesting but let me tell you, this sandwich is so good you will be glad you gave it a shot. I thought adding some ham was a good addition so give it a little more flavor and texture. My husband said, “This sandwich is so good that I would pay for it!” So there you go, give it a shot.

Ingredients
4 medium slices sourdough bread (or whatever you have)
1/2lb artichoke jalapeno dip (store bought or homemade)
2 thin slices deli ham
butter
Directions
Step 1
Lightly butter one side of each slice.
Step 2
Heat skillet at medium to med-high heat and cook ham slices for a few minutes until they get hot with a little marking on them, set aside.
Step 3
Place butter side bread on hot skillet and add dip, then ham slice and then other slice of bread buttered side up. Cook for 2-3 minutes on each side making sure not to burn.
My husband chose to have spicy chicken sandwiches for dinner, and when he says something he wants I go with it because he doesn’t give ideas often These turned out delicious and I will make again. I made one for my daughter that was not spicy, before I coated the chicken if Franks hot sauce. So this recipe is very adaptable to the whole family.

Ingredients
1lb chicken breast
6-8 slider rolls (We used Hawaiian sweet rolls)
2 cups coleslaw
1/2 cup coleslaw dressing
8 thin slices cheese (we did half cheddar and half pepper jack)
8 tablespoons hot sauce (we used Franks hot sauce)
2 tablespoons olive oil
4 tablespoons flour (to coat the chicken, optional)
salt & pepper
Directions
Step 1
Heat oil in skillet on medium heat. Coat chicken breasts in flour, salt and pepper. Place in skillet for 4-5 minutes on each side, until cook thoroughly. I used thin breasts so it probably cooked faster than most.
Step 2
Pre-heat oven to 350. Toast buns slightly for 2 minutes, then add cheese to one side of each split roll and cook for another 2-3 minutes, until cheese is melted.
Step 3
Mix coleslaw with coleslaw dressing and set aside.
Step 4
Let chicken rest for 5-10 minutes after cooking. Then shred with 2 forks or your hands.
Step 5
Then add as much hot sauce as desired, the chicken soaks it up and we like it HOT so we added a lot. Pull some out before adding sauce for kids.
Step 6
Pile on the shredded chicken and then coleslaw and top with the top half of the slider.
I paired it with roasted asparagus and it was a delicious meal.
Don’t you hate when you are eating a BLT and the bacon comes off in whole strips? Well I do and when I saw this idea on Pinterest I thought it was too amazing to not share. It actually stayed on my sandwich without moving and then you are guaranteed to get a piece of bacon in each delicious bite.
You can top this sandwich with the normal BLT toppings. Here is my BLTA that I think is beyond delicious. Or this bacon latticed square would be excellent on a breakfast egg sandwich. That will be my next task, Enjoy!

Directions
Slice bacon strips in half. You will need 6 for each sandwich.
Lay 3 slices down all facing the same direction. Then take the other 3 slices and and you will lay them the other way by folding them into the 3 existing ones. Top, bottom, top, and then on the next one bottom, top, bottom and third is top, bottom, top. Make sense? Hope so!
Bake at 425 degrees F for 15-25 minutes, depending on how crispy you like it, drain on a paper towel until ready to serve. Each latticed square makes 1 sandwich so make as many latticed squares as you need.
BLT
Breakfast Egg Sandwich
I just put a fried egg, little pepper and a small slice of pepperjack cheese and then topped with my bacon lattice square!
I’m always trying new grilled cheese sandwiches, adding different ingredients to make it more interesting and this one is quite tasty. I love pepperoni pizza so I added cheese and some turkey pepperoni and out came this pizza grilled cheese sandwich. I bet the sandwiched dipped in marinara would be excellent but I didn’t have any on hand, so I went with my go to side for grilled cheese… Franks Hot Sauce which is so spicy and that’s probably why I love it. Of course tomato soup is always great, but the sandwich is great all by itself, no dipping required.

We love Salmon and are always trying out new recipes but our favorite method of cooking salmon is an easy fail proof way. We usually have a small sliver left that I will eat in a salad for lunch the next day but today I was feeling more creative and thought I wonder how salmon would taste on a grilled cheese. So what better way to find out then to give it a shot. I was pleasantly surprised with how delicious it was and it’s always nice to find a new tasty and quick lunch recipe.

Salmon Grilled Cheese
Time 10 minutes
Servings 2
Ingredients
4 slices of your favorite bread
4 slices of pepper jack cheese
handful of baby spinach
1/4 lb wild salmon, cooked
Directions
Butter 1 side of each piece of bread.
Lay 2 piece of bread in medium-hot pan, buttered side down.
Layer cheese, then salmon and then spinach on each piece of bread. Then top with the other 2 slices of bread, buttered side up.
After about 4 minutes of cooking flip sandwich and cook other side until golden brown.
I love to dip grilled cheese in franks hot sauce, but this sandwich is good just by itself.

Time for lunch today and I wasn’t sure what to make, so I decided to put a bunch of my favorite veggies on a sandwich and give it a Greek twist with Tzatziki sauce. It turned out great and of course I paired it with one of my favorite sides, kale chips. This was a great combo that my daughter and I enjoyed thoroughly. Even if you aren’t vegetarian this sandwich has so much flavor that you won’t even miss the meat, trust me.
Vegetarian Green Sandwich

1 broccoli stalk chopped small
Bacon, check. Avocado, check, Pesto, check.?. Everyone loves BLTs and some know that avocado is delicious on there. But who has tried cilantro pesto? I had some extra pesto from the other day so I knew it was good on regular sandwiches, so I figured it would be just as good on this, and boy was I right. Give it a try, you won’t be disappointed.
