Oven Roasted Asparagus

This recipe is super easy and so simple. It is my favorite way to prepare asparagus and not sure if I would ever steam again. It’s easy to prepare for a large crowd or small. You could also experiment with different spices to match whatever dish you are preparing it with, I’d love to hear what spices you try.

Oven Roasted Asparagus Recipe

Ingredients

  • 1 bunch asparagus
  • 4 tablespoons olive oil
  • kosher salt
  • fresh ground black pepper (to taste)

Note

The secret here is for the oven to be really hot so the asparagus can begin to brown on the outside without to over cooked on the inside and becoming flimsy, you want it to still have a bite to it.

Directions

Step 1
Preheat oven to 425 degrees.
Step 2
Wash the asparagus thoroughly then stack a bunch together and cut off the tough/thick bottom an inch or so. Or where they break easily.
Step 3
Pat dry, if there is water on them it will steam them. In a single layer spread asparagus and generously drizzle the olive oil and then with the salt and pepper.
Step 4
Roast the asparagus for 8-10 minutes. Not flimsy, but brown with a bit of a crunch to it.

Lemon Broccoli

Lemon Broccoli

Time: 15 minutes
Servings: 4

Ingredients
1lb broccoli or broccolini
1T extra virgin olive oil
1-2 teaspoons lemon zest
2 T lemon juice
dash of salt and pepper

Directions

  1. Steam broccoli for 4 minutes until tender but still crisp. Put in an ice bath to stop cooking.
  2. In a small bowl whisk other ingredients.
  3. Drizzle over broccoli and serve.

Baked Oven Fries

I love homemade French fries, but I prefer baked over fried. So when I came across the idea of wrapping the sheet in foil first I had to try it out. I have made this recipe quite a few times and every time I get delicious fries, so I knew I had to share.

Baked Oven Fries

Time About 1 hr
Servings 3-4 (depending on size of potatoes, approx 1 potato/person)

Ingredients
3-4 russet baking potatoes, cut into wedges or thin strips (I leave skin on)
4 T vegetable oil
Salt and pepper to taste
Optional spices: seasoning salt, cayenne pepper, garlic salt…endless options

Directions

  1. Soak potatoes in hot water for 10-30 minutes.
  2. Preheat oven to 475 degrees F. Put 2 T of oil in baking pan and fully coat bottom. Sprinkle some salt and pepper on pan.
  3. Drain potatoes and dry off with paper towel. Then put them in a dry bowl and add 2 T oil to coat.
  4. Put the potatoes in a single layer on baking sheet and add salt and pepper.
  5. Cover tightly with foil and bake for 10 minutes. then remove foil and bake for an additional 20 minutes.
  6. Use a metal spatula and flip each wedge, and keep in a single layer.
  7. Continue baking until fries are golden and crisp, 10-15 minutes.

Rotate pan throughout baking to ensure even browning.

Kale Chips

People are always looking for ways to incorporate greens to their daily meals. Salads are most peoples way of doing this. By incorporating kale instead of lettuce you are boosting your vitamins for the day and consuming one of the SUPER foods. Also kale holds up better then lettuce and doesn’t get soggy. I always use this now instead in salads and on sandwiches.

I love kale but had never tried baking it. I had heard that kale chips were delicious, but wondered…how delicious. Well I’m glad I decided to try it. My daughter (1yr old) loves them. She pops them in her mouth and keeps going back for more. Even my husband thought they were tasty. So if you are leery, don’t be. This is a super easy recipe and a great way to add kale into any meal.

Kale Chips

Ingredients

Handful of Kale
Extra Virgin Olive Oil
Sea Salt

Directions

  1. Preheat oven to 350 degrees F.
  2. Wash and chop kale into bite size pieces and dry.
  3. Lightly grease baking sheet with cooking spray or small amount of oil.
  4. Put dry kale in bowl and pour a few tablespoons of olive oil to lightly coat.
  5. Spread kale onto baking sheet and lightly sprinkle with salt.
  6. Bake for 10-12 minutes.
  7. Pull out and enjoy
